I've heard so many mixed opinions about potatos my head is spinning lol
I just want to know if a) baked potatos are okay to eat, and b) if I should eat the skin or leave it.
I used to bake a potato and mash up the inside with some cooked spinach and salt&pepper. I want to know if the carbs from the potatos are REALLY bad for your diet!

potatos are ok to eat
the skin has fiber so I'd eat it...
Carbs to not make you fat - excess calories do... so relax.. :D they won't bite you

Dont sweat it. Baked taters aint too bad. 1 medium is like 130 calories and about 30g of carbs. The problem comes when you add a tbs of butter (100cal) a tbs of sour cream 65 cal. not counting cheese, bacon, and all that crap. Before you know it you have a 500 calorie side dish.
Try this instead. Roasted red potatoes with rosemary and garlic. But baked potatoe w/spinach is fine. Just be shure and not have a bunch of other starch with the meal and have a good protein source.

I don't like butter or sour cream lol- so that's not a problem :) I like my baked potatos with just spinach! I'll have to add some garlic too... I LOVE garlic!
