I saw this thing in a fitness magazine about a girl in fitness competitions and what she eats. It listed her diet, which included a lot of egg whites. Anyone know how they are cooked?

Same as any other eggs, scrambled, poached, omelettes, etc...

'zackly - though keep in mind that since egg whites have no fat - they tend to really stick to the pan....

On the web (and this site) for years has been the ziplock bag omelette method which really minimizes cleanup

There's a movie with Steve Martin, where he plays a travelling revival tent preacher -he goes into a diner and orders a KKK omelette (white's only :D )

There is NO magic to egg whites though -it's protein and low calorie - so eat them if you enjoy them but don't expect any kind of added magic.

One thing I'll do with egg whites is cook up a bunch of vegetables then dump the egg whites over it. Makes a nice and easy meal with a good amount of protein.

Another thing to do is to hard boil a bunch of eggs. Eat the whites and throw away the yolks. Egg salad this way is good, too. I'll use LF mayo and Tabasco for a little kick.

On that same note - almost...

hard boil the eggs
peel them
cut them in half lengthwise

Toss out the yolks

fill the center with hummus for a delicious hummused egg - much tastier than deviled eggs.. :D or even fill with salsa... for some kick

Egg whites tend to be very bland on their own - so some spice helps them along a lot

I like that one. I'm going to try it. Thanks!

The only problem with hard boiled eggs is they tend to stink up the place when you throw out the yoke.

well, duh, throw it in the trash.. I know they bounce and stuff -but the cat can get their own toys to play with :)

I personally say -eat the yolks -it's the best part of the egg :) though sunny side up slightly runny over rye toast with bacon on the side is my favorite way to go :)

When I went on my first "diet" last summer, my trainer had me cut out all yolks. It sucked so much. I raise chickens, so I just fed the yolks back to them. But I came to the conclusion that I hated eggs.

Now that I am simply eating properly instead of dieting, I eat the whole egg, just less of them. I looooove soft boiled eggs with a perfectly creamy yolk....yummmm....

I love eggs. I could easily eat four eggs a day. Nothing is better then fresh eggs. My thing is that I have so many eggs that I have to eat them up. If I ate that many yolks I'd be in worse shape then I am now.

when I make scrambled eggs or an omelette -i will generally use 1 whole egg and 3 egg whites - 2 whole eggs 2 egg whites if it's dinner = scrambled egg whites just need a lot of help... I need that color.. :D and egg beaters just taste too processed for me these days...

That's an excellent idea. I usually eat one out of the 4 yolks when I eat hard boiled eggs, but I hadn't thought about using hummus (which I love) as a filler.

My doctor said I couldn't go over 300 mg of cholesterol in a day. I'm pretty sure one egg has 200. So I rarely eat eggs because I always want like 3. :(

Carthonn, I'd double check your info on that. I'm not too sure, but I think so.

Guys, don't the yolks have basically no fat? And wasn't the whole "eggs are bad for your cholesterol levels" a myth? Anyone REALLY know?

Thank you!!!

Is there a limit to how many eggs I should be consuming daily? Or weekly? I ended up just hard boiling them, scooping out the yolks, and sprinkling a little tamari on them. They were really good. I was surprised. This will now be used as a way to get protein into my diet.

You have it backwards. The whites have no fat. The yolk is where the fat and cholesterol are. As far as the myth, it keeps changing. There is some correlation to eating cholesterol from eggs and a lowering of blood cholesterol, but don't listen to me. Listen to your doctor.

Egg whites - no theres no limit... egg yolks - depends on what month it is - -that info seems to change regularly... It depends on what your current cholesterol level is I'd think... and if you haven't had it checked... do so..

As for cooking them, seperate the yoke and the white. Boil some hot water in a pan, get it hot and stir the water so it's like a little whirlpool. Then quickly add the white into the cetrre where the short lived whirlpool help to bind it. A couple of drops of vinegar added to the water usually helps also.

Hehe, oopsie... I do actually know that *sheepish grin*... guess I was in a hurry typing and mixed my words! I meant to say egg white, no yolk! (I always confuse the words, don't ask me why)

And hmm Big John, that sounds like a fun way to make eggs, I'm gonna try it! Thanks!

one of these days I'll wax poetic on the merits of a zip lock bag with a piping tip and how pretty you can make your hummused eggs with just a little bit of effort :)

Hee, hee. That's what I've been doing with regular deviled eggs. I thought I was brilliant to think that up. Guess I'm just one of many. :D

for years I wanted a pastry bag because I just thought it was cool - and I took a cake decorating course at wilton where I got a pastry bag.. and tips... and then tried to cleant the damn thing.. it ended up in the trash... :D

zip lock bags are far more cost effective...

Egg whites are great holders for lots of things... and hummus can be edited to make lots of different dips -substitute the garbonzos with white beans and it's really good...

The yoke is the most nutritious part of the egg, so I always eat them. An egg altogether has only about 70 - 80 calories, so I don't think the yolks are such a big deal. If you have heart disease and have to cut out all cholesterol, that's one thing, but if you're otherwise healthy, eat the yolks. And try to get farm-fresh eggs (you can get them at a health food store or farmer's market) because hens that are pastured have a chance to eat lots of bugs which lends to a more nutritious egg. Plus, they're a lot happier than their battery-cage-raised counterparts. :)

Although... black bean dip inside an egg white might not be the most appetizing thing to the eyes. Hmm, nothing a sprig of cilantro can't jazz up. I'm gonna try it.

Egg whites are awesome; especially for building muscle and staying lean.

When I was really thin and motivated, I would usually go for one egg yolk and another two whites just to bump up the protein and still not have a too high of calorie intake.

I also read somewhere, and have heard it before, that you can have egg whites raw without too much fear of getting sick. However, I don't recommend taking my word on that without looking it up.

Also, there are places that you can get huge TUBS of egg whites instead of buying eggs and throwing out the yolk.

If you decide to take the yolk out before you cook the egg (like hard boiling it) make sure you wash the outside of the egg well enough, this will keep the chance of you getting salmonella poisoning down.

:)
