I made this white fish recipe just now that I thought was really good, and I wanted to share it.
Coat both sides of fish with a sprinkling of lemon pepper and salt. Cover with yellow pepper, mushrooms, 2 green onions, fresh chopped tomato, clove of garlic. I don't know amounts for those, because I didn't measure, but I had a pretty big pile on top of the fish when I was done. Pour 1 tablespoon olive oil over fish and vegetables, then squeeze 3 small lemon slices over it all. Bake at 350 for 25 minutes, covered. I then just poured off any excess liquid, and ate it over brown rice. It was really good. I used orange roughy, but I think it has a lot of mercury, so next time I'll use some other kind of fish.

mmm sounds great, ty for sharing the recipe. We've tried alot of fish recently and after a friend suggested I try Tilapia I found I really like it. It holds up pretty well and comes out flaky, not soggy and isn't really too fishy tasting.
